Ingredients
Buttery base and topping:
140gwhole-wheat flour
120gall-purpose flour
200gsalted butter (very soft at room temperature)
1tspchai-spice mix (it's a mixture of ground cardamom, nutmeg, ginger, cloves & cinnamon)
Grease and line an 8x8 inch square baking pan, set aside and preheat your oven to 175 C
Sift all your dry ingredients (flour, sugar and spices) into a medium-large bowl.
Add the very soft salted butter and gently mix everything till it comes together. The mixture should be very pliable and soft.
Dump 3/4th of the mixture into the prepared baking pan and press it evenly to cover the base. Gently poke the base using a skewer or a fork and bake this for approximately 12-15 minutes or just almost set. Remove from the oven and keep it aside while the oven continues to heat and you make the filling.
Make the filling:
Wash and remove the pitts of your cherries and add them to a bowl with the sugar, salt and cornstarch. Mix them till everything is evenly combined.
Add this on top of the semi baked crust and spread it evenly. It is okay if your crust is not cooled completely.
Now take the remaining 1/4th of the base mixture that you kept aside. Take some portions of it and press it into chunks and scatter them on top of the cherry filling.
Bake this for approximately 45 minutes or until the filling bubbles.
Let the bars cool down completely and refrigerate them for around 30 minutes after that for easy cutting and even slices.
